This week sees the return of our exquisite North Indian Lamb Masala.
Norfolk lamb from our local butcher, The Butcher's House in Long Stratton. Cooked in an authentic masala full of fresh mint, fresh coriander, green chilli, garlic, fresh tomato, ginger, and fennel.
North Indian Lamb Masala is cooked in mustard oil, with aromatic whole spices, onions, yoghurt, powdered spices, and our own freshly ground garam masala.

This week's fresh mild chicken option is Badami Chicken.
Ground almonds and cream are the main ingredients for this delicious curry gravy. But first, the chicken is marinated in ginger, garlic, pepper, and lemon. Then simmered in cream. And tempered with whole green cardamom, peppercorns, cinnamon, and bay.
The curry is finished with a little methi for both aroma and flavour. Mild, creamy, and slightly nutty.

Hi folks. Here's a link to the new Hippie Trail Kitchen FB page. If you are interested in clean, healthy and nutritious food, please follow, like, and share.
My plan is to create vegetarian and vegan food along the original hippie trail. Of course, Indian food will play a big part, as will Middle Eastern, Tibetan, Moroccan, and South Asian.
At present, I have no plans for a website, branding, or distribution. But unlike Chaat Man, I do foresee wholesaling as an option. The Hippie Trail Kitchen may stay small, and that's fine with me. Or it may grow, depending on demand. Let's see what happens. And look out for new products in the following weeks and months.

I'm back at Black Barn Farmersā Market this Saturday. I highly recommend this market for a morning out. It's huge, 70 traders, a makers market, a bistro, clean well-maintained loos, and free parking and entry. What's not to love?
And if you do pop along, make sure you say hello, I'm indoors at the rear of the barn next to the makers market stalls.

I'm starting something new, it's just a side hustle for now, but it may become successful.
The Hippie Trail stretched from Europe to India and Asia. Around the same time, macrobiotics and vegetarian food were becoming the new way of eating. I plan to create a range of vegetarian and vegan meals, taking in all the cuisines along the hippie trail. It'll be fun, healthy, and full of delicious food. I may start a new supper club and sell meals via next-day delivery. Who knows where it may or may not go?
The hand-painted sign (thank you, Mike) is already at Chaat Man Indian Deli. Let's see what it manifests!

Khatta Meetha Kadhu -
Sweet and Sour Pumpkin Masala with Green Mango
Absolutely delicious, healthy, and seasonal!
With so many meat options available this week, I thought it was time to increase the veggie and vegan options.
First is Himachali Khatta, a plant-based black chana curry with dried mango, coriander seeds, fenugreek, garlic, chilli, clove and jaggery.
Unusually, the coriander seeds are kept whole in this curry, so you have a lovely silky smooth gravy with the odd pop of coriander. It's slightly sweet, sour from the mango and fragrant from the whole spices.

Thereās a huge difference between British Indian cuisine and authentic Indian cuisine. Both taste wonderful if done well. But my journey has always been to learn the authentic way, what they call in India, desi cooking.
Desi means homemade, normally cooked by mum and prepared in a time-honoured fashion with great care and attention to detail. Every masala is freshly roasted and ground, every ingredient is mindfully prepared with respect and gratitude.
In restaurants, recipes are created with high turnover in mind. Base sauces are pre-made to thicken and flavour but quite often miss the mark and make every dish taste the same. And more often than not, sub-standard ingredients are used so restaurants hit their profit margins.
Chaat Man is different. We donāt work in a restaurant environment and so greater care is taken throughout all aspects of our food preparation. Only the very finest ingredients are used, such as locally reared high welfare lamb, mutton, goat and beef. Our chicken comes from local farms where theyāre free to roam outdoors and have great space indoors unlike many battery farms. And vegetables are handpicked from local farm shops and independent retailers.
Every dish is made to an authentic Indian recipe. And enhanced with a freshly roasted and ground masala. Cooking is slow, nothing is rushed. Flavours are enhanced and deep, and customers return, wanting to further explore our exciting cuisine.
Chaat Man is about doing things right, respecting true Indian cuisine, and offering our customers a wide range of regional and speciality dishes. Yes, you will find time-honoured classics. But youāll also discover many new and exciting dishes that may well become your new favourite dish.
