I am endlessly inspired by and her ability to transform sugar into sculpture, creating wedding cakes that are edible works of art. I am sharing a few of my favourite collaborations with her today as I reflect on the recurring debate about the cost of wedding cakes, whether grand in scale or beautifully understated.
My advice to couples is always this: whether your preference is for an architectural centrepiece or a smaller yet exquisitely refined design, a couture cake is never simply sponge and icing. Long before a single tier is baked there are design consultations, detailed correspondence, flavour development and tastings, sketches and revisions, all shaped in dialogue with your wider aesthetic and the proportions of your venue. Add to this the hours of skilled craftsmanship, hand finished sugar work, structural precision, premium ingredients, temperature controlled transport, venue access planning and intricate on site installation and it becomes clear that what appears effortless in the final photograph represents weeks of highly specialised labour behind the scenes.
Importantly, reducing the size does not remove the framework of work. A smaller cake still requires consultation, design time, baking, finishing, delivery and installation, which is why even a modest yet beautifully executed piece represents a considered investment. You can absolutely choose something small, simple and exquisitely refined if that aligns with your priorities, just don’t underestimate the artistry involved and to invest accordingly in the time, expertise and craftsmanship that underpin such work.
