I keep forgetting to share my latest recipe during these busy summer weeks but, with the courgettes growing like triffids I thought I must be this one out there.

Another courgette idea is tempura them and serve with a sweet and sour dip; pan fry with shallot, garlic, double cream and freshly grated Parmesan. Season S&P.
