As this week comes to an end, I find myself reflecting on how fortunate I am to call this my profession.
For the past few days, I’ve been cooking in the heart of Andalusia for a wonderful UHNW family, far from the beach clubs, marinas and luxury resorts that many associate with Southern Spain.
Instead, my view has been endless hills, ancient olive trees, whitewashed villages and some of the most honest ingredients this region has to offer.
Every morning started with a simple question:
“What is at its best today?”
The answer shaped the menus. Local vegetables harvested at their peak. Exceptional olive oil from nearby producers. Fresh fish, seasonal fruit, artisan cheeses and traditional ingredients that have been part of Andalusian culture for generations.
As private chefs, we often talk about luxury.
But after a week like this, I’m reminded that true luxury isn’t always about rare ingredients or extravagant presentations.
Sometimes it’s sitting around a table with family and friends, sharing food that genuinely belongs to the place where you are.
That’s what I’ve tried to bring to every meal this week.
A taste of Andalusia, served with respect for its land, its people and its traditions.
