Another favourite weeknight meal of ours is Roasted Chicken.๐๐ Marinade the chicken using your favourite dry rub seasoning for a few hours. When ready to cook, use a big enough casserole dish or Dutch oven, roughly cut a few onions into big chunks and layer them at the bottom of the dish, then place the chicken on top of the onions. Dollop a tbsp or two of butter on top of the chicken and bake at 425ยฐF for 20 min, then lower temperature to 375ยฐF and bake for another 15 min. In the meantime, cut up potatoes, carrots, or other choice of veggies such as squash or parsnip. Take chicken out of the oven, add the veggies into the dish (you can place veggies under and around the chicken). Then add about 1 cup of chicken stock (we use low sodium) into the dish. Cover the dish with tin foil (or put lid on if using Dutch oven) and bake for another 30 min, until all the veggies are softened and the internal temperature of the chicken reaches 165ยฐF.๐ก
Our favourite way to serve is with stuffing. It doesn't need to be fancy, the store-bought ones in a box is easy and delicious! You can use all the juice to make a nice gravy or simply drizzle the juice over the chicken and veggies when served.
This may look like a lot of steps, but it is actually so effortless to prepare. The chicken is so juicy and tender, and all the veggies soak up the essence of the chicken they are very flavourful without additional seasoning required. Bonus points for this dish: clean up is minimal! ๐ค๐คฉ๐๐
