Field and Fork: An Evening with PARCS - MENU REVEAL 🍽️
The wait is finally over — here’s your first look at the Field & Fork: An Evening with PARCS multi-course dinner menu!
Each course highlights Alberta’s fall bounty, crafted with artistry and heart.
Over the next few weeks, we’ll be connecting with local farms and sponsors, and their names will be added into our menu as the event draws closer — stay tuned! 🌾
Last night, some of our board members enjoyed a private tasting, and trust us… you do not want to miss this incredible menu by HT Catering & Meats
🥚 Welcome
A harvest-inspired opening: classic devilled eggs, reimagined with candied smoked bacon and finished with a delicate dried edible bloom
🍞 Loaf
An interactive indulgence — a slow-melting homemade butter candle infused with aromatics, paired with pillowy hearth-baked varieties of focaccia.
🥣 Harvest
Velvety roasted butternut squash soup, enriched with creamy coconut milk and topped with the delicate crunch of toasted sunflower seeds.
🥗 Vegetable
Earthy roasted beets and crisp apples, tossed with vibrant mixed greens, maple-toasted walnuts, and crumbled farmstead feta, all dressed in a golden honey-dijon vinaigrette.
🥩 Main
Slow hickory- and cherry-wood smoked prime rib, oven-roasted to tender perfection. Served with creamy potato purée, jewel-toned roasted tri-colour roasted carrots, and decadent smoked cowboy butter with a red wine reduction.
🍰 Fin
Decadent salted caramel ganache art cake, on a drizzle of wild saskatoon coulis — a sweet homage to Alberta’s wild bounty.
