The definition of "Looks can be deceiving"!

To the Sourdough bread makers out there...how many tries does it take to get it right?

I attempted to make a Sourdough Focaccia this weekend which took around 16 hours to make. Yes! You read that right!
From the 3 fold intervals to the 12-hour bulk rise, then the second rise and lastly the baking time. Baked at 450F in the sheet but used a Silpat matt beneath the dough and did not put it on the lowest rack. Is it the oven that's not holding in the heat?

After an hour of baking, it did not puff up or fully cook or turn golden. I had to broil it for the top half to cook but the bottom part remained undercooked which I used the toaster oven to crisp.

On the upside, the flavour was great!

Any thoughts??
