**ISI EWU RECIPE 🇳🇬🔥 | Nigerian Spicy Goat Head**

# # # Ingredients

* 1 whole goat head, cleaned and cut into pieces
* 1 medium onion
* 2–3 Scotch bonnet peppers, adjust to taste
* 1–2 tbsp ground crayfish
* 1–2 tsp ground ehuru (calabash nutmeg)
* 2–3 seasoning cubes
* Salt, to taste
* ½–¾ cup palm oil
* 1 tsp edible potash (akanwu)
* 2–3 tbsp warm water, for dissolving the potash
* Utazi leaves, thinly sliced
* Fresh onion rings, for garnish

# # Method

1. **Cook the goat head:** Place the cleaned goat head in a pot. Season with onion, seasoning cubes and salt. Add a little water and cook until very tender. Reserve some of the stock.

2. **Prepare the potash:** Dissolve the potash in a small amount of warm water. Allow any residue to settle, then carefully use the clear liquid from the top.

3. **Make the sauce:** Pour the palm oil into a clean pot or bowl. Gradually add a little of the potash liquid while stirring continuously. The palm oil should thicken and change to a creamy yellow-orange colour.

4. **Build the flavour:** Add ground crayfish, ehuru, blended Scotch bonnet and a little seasoning. Mix well. Add a small amount of the reserved goat stock if you need to loosen the sauce.

5. **Add the goat head:** Add the cooked goat head pieces and mix thoroughly until every piece is coated in the sauce.

6. **Finish:** Warm everything together for a few minutes, then add sliced utazi.

7. **Serve:** Garnish with fresh onion rings and extra utazi. Serve warm and enjoy! 🤤🔥
