🥒 Cucumber Feta Salad 🥗
Short Description:
Crunchy veggies, creamy feta, and tangy dressing combine for a delicious, fresh salad.
Ingredients:
Salad:
1 long English cucumber, sliced into half moons (roughly 4 cups)
1 small avocado, diced
½ red onion, thinly sliced
4 oz feta cheese, crumbled
1 tablespoon chopped parsley
1 tablespoon chopped fresh dill
Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1 clove garlic, finely minced
½ teaspoon dried oregano
½ teaspoon kosher salt
¼ teaspoon black pepper
Directions:
Prepare Ingredients:
Slice the cucumber into half moons.
Dice the avocado.
Thinly slice the red onion.
Crumble the feta cheese.
Chop the parsley and dill.
Combine Salad Ingredients:
Add the cucumbers, avocado, feta cheese, red onion, parsley, and dill to a large mixing bowl.
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and pepper until well combined.
Dress the Salad:
Pour the dressing over the salad ingredients.
Gently mix until everything is coated with the dressing.
Adjust Seasoning:
Taste the salad and adjust the seasoning if needed.
