Saluti alla Famiglia was the beginning of this venture in 2020. We went right back to where it all started when our Nonni first came to Australia and brought many skills and value across a long ocean trip looking for a new place to settle and establish a family. Once settled in Adelaide, they started to establish associations linked back to Italy through the catholic church. These Associations wou

ld represent regions that were aligned with special saints that played a big part in the Italian history. The Saluti Project are a part of two Associations in Adelaide, Maria SS. Di Tutte Le Grazie Sinoplese and St Eufemia D'Aspromonte. Our family has heritage in both associations that would be described as two suburbs next door to each other located in Calabria, South of Italy. Becoming part of these associations meant countless hours of volunteering time and support to keep our traditions alive, but we were never afraid of this because we knew we would be creating so many great memories and making lots of new friends along the way, with plenty of stories to share! We gained skills and traditions that can only be taught by hand, these skills are constantly passed through the generations over the years. Our online retail store opened during the Covid19 pandemic to ensure everyone had access to great Italian products that were stable on the shelf and bursting with flavour. We have the full range of Romanella products that we also use in our cook up videos on our social media. These items are always available through our online store for you to purchase. We also use these products in our raffle prize hampers that we donate to our Italian associations, to help them raise money to contribute to the running of the annual festas. Saluti alla Cucina is the next stage of our food adventure. We developed a catering brand that brings our Italian food and culture to your function ensuring we keep our traditions alive. Our Mobile wood oven is going to be shining bright when you see us out and about and our Zeppole fryers will be on with those amazing smells that you would only find at Nonna’s House. We have worked hard to create recipes that are simple and full of flavour with my Nonni’s seal of approval. Our catering is not just about the food you eat, but more about bringing everyone together for an experience like no other. We are always coming up with more ideas to help grow The Saluti Project. Our latest adventure is learning how to play the tambourine and the Organetto. Our favourite is the Tarantella dance which is native to the Southern part of Italy and first came about during the 15th and 16th centuries. People would come out of their homes to dance to the sounds from the Organetto. The steps of the dance are typically described as a psychological illness characterized from the bite of the tarantula (Spider). The Tarantella is not just a dance, but a tradition that helps maintain our Italian culture in Australia. We can’t wait to share with you our special Organetto that is currently been getting custom made in Italy. Keep any eye out for us as we will be out and about in the Italian community creating lots of great memories as well as inspiring, influencing and encouraging others to come and join us.

Found another gem Italian restaurant on our family road trip in Ballarat, Victoria called Carboni's
These handmade fresh soft gnocchi pillows with a creamy truffle sauce were a favourite. The pizzas were hand stretched, and all the pastas were made in-house. The wine list was from all different parts of Italy. They also make a great home style limoncello that we brought back home with us to enjoy. When you are in Ballarat, pop in and see them, but don't forget to book a table as they have a full house most nights.

Today we had an awesome day at Victorian Salami Festival at Dal Zotto Wines
We had a chat with Christian about the salami festival and how it is growing bigger each year. This sell out event brought lots of people together who share the same passion as us when it comes to making salami at home. We discovered so many different variations from different parts of Italy.
Well done on a sucessful event and looking forward to next time.

We are at Dal Zotto Wines in the great alpine region of Victoria. Today, we are enjoying amazing food and drinks alongside all of the competitors for the Victorian Salami Festival
May the best sausages win an opportunity at this event that has been running for 10 years!

My sons and I had a super productive day at home in the garden today to start the school holidays. Tonight, we thought a night out for dinner was a good idea to recover and keep spending much valued time together. We discovered this woodoven pizza bar near home called Dal PizzaVendolo the pizzas were amazing, and the Truffle oil and mushroom pizza had so much flavour. This little gem is hidden in the backstreets of Ferryden Park, South Australia. Go check it out as my sons and I rated it very high, definitely a stand out for woodoven pizzas.

When our Nonni first came to Australia in search for a better life, they brought skills from the motherland to help them survive in this new land called Australia. They adapted well to the new ventures in their lives growing seasonal produce in limited spaces and sharing them with everyone around them.
Today we live those Italian traditions that have been passed on to us growing seasonal produce in our own gardens. My boys and I went to Virginia nursery and picked a great selection of seedlings for our garden, spending the afternoon planting and organising our garden space.
We have lots of cooking ideas once our crops mature and can't wait to share them.

What a fantastic weekend at the homemade sausage competition at Veneto Club Bulleen
Whilst I didn't walk away with a prize I was up against 100 competitors. Congratulations to all the winners. It was great to socialise with so many like-minded people in Victoria who share the same passion as us at the Saluti Project. Big congratulations to the event organisers and stall holders for creating such a successful event.
MC James Liotta was rocking the microphone and Massimo Corente socialise and bring the party.
We met lots of new faces and businesses that we will share with you soon. I have lots of planned collaborations coming up as we work through our Italian network, bringing you all some amazing taste sensations from so many different parts of Italy in Australia.
Looking forward to coming back next year!

Day 1 of my trip to Melbourne was great. Met some new friends and tried lots of amazing Italian food.
Dinner tonight was Noi Pizzeria in Melbourne. My favourite pork and rabe pizza, fantastic base, and great flavour combo.
Tomorrow is judgement day for the homemade sausage competition at the Veneto Club Bulleen i am up against 100+ entries!

This will definitely be something new to check out and show the Victorians how the Calabrese from South Australia make salami! 😜

Mushroom picking in the Adelaide Hills.
We were up nice and early at 6am eager to find the mushrooms before everyone else.
We hit the jackpot as soon as we got out of the car, finding the Gold.
Always do your research before picking any mushrooms, lots of information online.

I was up nice and early this morning to go mushroom picking in my favourite spot.
Found 1 Milk cap and that was it. Brought my mushroom book with me that my cousin bought for my 40th birthday, very helpful in identifying the different types. Hopefully try again soon.

Of course a quick early morning stop at P*k a Pie Bakery at Meadows. Amazing!!! Definatley a 5 star rating.
