These Crispy Parmesan Zucchini Potato Muffins Are EVERYTHING!
Who knew healthy could taste this good? These little golden muffins are crispy on the outside, tender inside, and packed with zucchini, potato, herbs & cheesy goodness. Perfect for brunch, snacks, or even meal prep!
No guilt. Just flavor.
And YES—they’re WW-friendly, low-cal, and totally addicting!
You’ll need:
2 medium zucchinis, grated
2 large eggs
1/4 cup milk
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried oregano
Optional: Add shredded potato & parmesan for extra crunch!
Just mix, scoop into muffin tins, bake till golden and crispy—and boom!
Snack goals = unlocked.
