You’ve heard of barbacoa, but have you ever had a barbacado?! Inspired by LeRoy and Lewis, we substituted beef cheeks for some oyster blade we had. Seasoned in our very own Tex Mex rub (coming soon!) 👀
Cooked over Heat Beads BBQ in a banana leaf, stuffed into an avocado and topped with homemade salsa, onion, coriander, queso fresca and a squeeze of lime! This is one tasty dish! 🥑

A few weeks ago before the lockdown blues, I was lucky enough to break down a beautiful Bruthen Creek Free Range Pork with my pals Fabio and Kyle at The Que Club. Here’s a little vid I made. Enjoy mates!

What do we have here? Cochinita Pibil: two ways! We love this slow cooked pork, marinated in an achiote and citrus mix, cooked in a banana leaf. Delicious in a taco or a Mexi bowl! 🌮 🌶
