🌶️ Red Thai Coconut Curry Chicken Meatballs 🥥

This was absolutely outstanding! I made this a couple of months ago, but this time I made my own chicken meatballs and it was even better. Creamy, full of flavour and so easy to make!

Serves 3

Chicken Meatballs

* 500g chicken mince
* 5 spring onions, finely sliced
* 1 red chilli, finely diced
* Handful of fresh coriander, chopped
* 1 tsp salt & pepper
* 1 tbsp garlic & ginger paste

Coconut Curry

* 1 red pepper, sliced
* 1 red onion, sliced
* 1 tbsp ginger paste
* 3 garlic cloves, minced
* 3 tsp red Thai curry paste
* 1 tbsp fish sauce
* 1 tbsp brown sugar
* 1 x 400ml can coconut milk
* 1 tbsp smooth peanut butter
* Fresh coriander to serve

Method

1. Add the chicken mince, spring onions, chilli, coriander, salt & pepper and garlic & ginger paste to a bowl. Mix until just combined, then roll into approximately 12 meatballs.
2. Heat a drizzle of oil in a large frying pan over medium heat and cook the meatballs for 10–12 minutes, turning regularly until browned and cooked through. Remove and set aside.
3. In the same pan, cook the red onion and red pepper for 5–6 minutes until softened.
4. Add the garlic, ginger paste and red Thai curry paste and cook for 1–2 minutes until fragrant.
5. Stir in the fish sauce, brown sugar, coconut milk and peanut butter. Mix well until the peanut butter has melted into the sauce, then simmer gently for 5 minutes.
6. Return the meatballs to the pan and simmer for a further 2–3 minutes so they’re coated in the curry sauce.
7. Finish with fresh coriander and serve over jasmine rice.

This is one of those meals that’s packed with flavour, comes together quickly and tastes like takeaway… only better! 😍

🌮 MEXICAN CHICKEN BOWLS 🌮
Fresh, filling & so easy to make 🙌 Perfect for lunches or quick weeknight dinners!

Loaded with taco chicken, rice, avo, crunchy salad & a little chilli kick 🌶️🥑

Serves 2

✨ Ingredients
• 300g chicken breast
• Mingles taco seasoning
• 1/2 avocado, sliced
• 1 tomato, diced
• 1 cucumber, thinly sliced
• Fresh coriander
• Spanish onion, thinly sliced
• 1 carrot, shredded
• 50g shredded cheese
• Fresh chilli to taste
• Cooked rice, to serve

Optional: corn kernels & jalapeños 🌽

👩‍🍳 Method

1. Cook rice according to packet instructions.
2. Coat chicken in taco seasoning.
3. Pan fry over medium-high heat until golden and cooked through. Slice if needed.
4. Prep all salad ingredients.
5. Assemble bowls with rice, chicken, salad, avocado & cheese.
6. Top with coriander, chilli & optional extras. Serve immediately!

WARNING: these are not your average cookies 🤤🍪

Gooey Biscoff Stuffed Cookies!

Ingredients

* 1 1/3 cups (200g) all-purpose flour
* 1/2 tsp (3g) baking soda
* 1/4 tsp (1.5g) salt
* 1/2 cup (100g) brown sugar
* 1/4 cup (50g) granulated sugar
* 1 whole egg + 1 egg yolk
* 1/4 cup (57g) Biscoff spread
* 1/3 cup (100g) butter, softened
* 1 tsp (4g) vanilla extract
* 1/2 cup (100g) white chocolate chunks
* 5–7 Biscoff cookies, roughly crushed + extra for decorating

Instructions

1. Prep the oven
Freeze 1 tbsp of Biscoff spread on parchment paper. Preheat oven to 350°F (175°C).
2. Mix the wet ingredients
In a large bowl, beat softened butter with both sugars until smooth and creamy. Add Biscoff spread, egg, egg yolk, and vanilla extract. Mix until fully combined.
3. Combine dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
4. Make the dough
Gradually fold the dry ingredients into the wet mixture until no flour streaks remain. Avoid overmixing. Chill for 30 minutes.
5. Add mix-ins
Fold in the white chocolate chunks and most of the crushed Biscoff cookies, saving some for topping.
6. Shape the cookies
Scoop dough portions (about 70g each), flatten, and place the frozen Biscoff spread in the centre. Fold and shape into balls. Add extra cookie crumbs or chocolate chunks on top if desired. Freeze for another 30 minutes.
7. Bake
Bake for 9–11 minutes, or until the edges are set and the centres still look slightly soft.
8. Cool
Shape cookies while still warm if needed and decorate. Let them rest on the tray for a few minutes before transferring to a wire rack.

✨ Tip: If you don’t have Biscoff spread, any cookie butter works as a substitute.
