🌮 MEXICAN CHICKEN BOWLS 🌮
Fresh, filling & so easy to make 🙌 Perfect for lunches or quick weeknight dinners!

Loaded with taco chicken, rice, avo, crunchy salad & a little chilli kick 🌶️🥑

Serves 2

✨ Ingredients
• 300g chicken breast
• Mingles taco seasoning
• 1/2 avocado, sliced
• 1 tomato, diced
• 1 cucumber, thinly sliced
• Fresh coriander
• Spanish onion, thinly sliced
• 1 carrot, shredded
• 50g shredded cheese
• Fresh chilli to taste
• Cooked rice, to serve

Optional: corn kernels & jalapeños 🌽

👩‍🍳 Method

1. Cook rice according to packet instructions.
2. Coat chicken in taco seasoning.
3. Pan fry over medium-high heat until golden and cooked through. Slice if needed.
4. Prep all salad ingredients.
5. Assemble bowls with rice, chicken, salad, avocado & cheese.
6. Top with coriander, chilli & optional extras. Serve immediately!

WARNING: these are not your average cookies 🤤🍪

Gooey Biscoff Stuffed Cookies!

Ingredients

* 1 1/3 cups (200g) all-purpose flour
* 1/2 tsp (3g) baking soda
* 1/4 tsp (1.5g) salt
* 1/2 cup (100g) brown sugar
* 1/4 cup (50g) granulated sugar
* 1 whole egg + 1 egg yolk
* 1/4 cup (57g) Biscoff spread
* 1/3 cup (100g) butter, softened
* 1 tsp (4g) vanilla extract
* 1/2 cup (100g) white chocolate chunks
* 5–7 Biscoff cookies, roughly crushed + extra for decorating

Instructions

1. Prep the oven
Freeze 1 tbsp of Biscoff spread on parchment paper. Preheat oven to 350°F (175°C).
2. Mix the wet ingredients
In a large bowl, beat softened butter with both sugars until smooth and creamy. Add Biscoff spread, egg, egg yolk, and vanilla extract. Mix until fully combined.
3. Combine dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
4. Make the dough
Gradually fold the dry ingredients into the wet mixture until no flour streaks remain. Avoid overmixing. Chill for 30 minutes.
5. Add mix-ins
Fold in the white chocolate chunks and most of the crushed Biscoff cookies, saving some for topping.
6. Shape the cookies
Scoop dough portions (about 70g each), flatten, and place the frozen Biscoff spread in the centre. Fold and shape into balls. Add extra cookie crumbs or chocolate chunks on top if desired. Freeze for another 30 minutes.
7. Bake
Bake for 9–11 minutes, or until the edges are set and the centres still look slightly soft.
8. Cool
Shape cookies while still warm if needed and decorate. Let them rest on the tray for a few minutes before transferring to a wire rack.

✨ Tip: If you don’t have Biscoff spread, any cookie butter works as a substitute.

🐰🥚 Easter Just Got WAY More Delicious! 🥚🐰

Say hello to my Rocky Road Easter Eggs!!

✨ You’ll need:
• 500g milk chocolate
• 125g red frogs
• 1 cup marshmallows
• 1/2 cup crushed nuts
• 1/4 cup desiccated coconut

✨Method
1. Melt the chocolate gently — don’t rush it! Too hot and your marshmallows & red frogs will turn into a gooey disaster 😅
2. Chop up those red frogs.
3. Toss marshmallows, red frogs, nuts, and coconut into a big bowl.
4. Pour in the cooled chocolate and fold it through like a pro.
5. Spoon into Easter egg (or just eat straight from the bowl… we won’t judge).
6. Chill in the fridge 2–3 hours.

Slow cooked Massaman beef curry 🤤🔥

This turned out SO good — rich, tender, and full of flavour. One of those meals that tastes like you ordered it but it’s actually super easy 🙌

🥘 Recipe: Slow Cooker Massaman Beef Curry

Ingredients:
• 800g–1kg beef chuck or gravy beef (chunked)
• 2–3 tbsp Massaman curry paste
• 1 can (400ml) coconut milk
• ½ cup beef stock
• 1 onion, sliced
• 2–3 potatoes, chopped
• 1–2 carrots, chopped
• 1 tbsp fish sauce
• 1 tbsp brown sugar
• 1 tbsp tamarind paste (or lime juice at the end)
• Optional: handful of peanuts or cashews

Method:
1. Brown beef in a pan (optional but worth it for flavour).
2. Cook curry paste for 1–2 mins until fragrant.
3. Add everything (except potatoes/carrots) into slow cooker.
4. Cook:
• Low: 7–8 hours
• High: 4–5 hours
5. Add potatoes and carrots in the last 2–3 hours.
6. Finish with tamarind or lime juice, adjust seasoning.
7. Top with nuts and serve with rice.
